I agree with Dan. Don't really need Prime, let alone Wagyu, for a rib roast. Maybe the best cut on the planet. Get a nice Choice roast, Sam's or Costco should be fine. Have cooked MANY of these over the years. I go with mostly Kosher salt and cracked peppercorns; some granulated garlic and a dash of cayenne, rub it down heavily. I go for 300-325 on the Weber kettle, with some nice hickory or even mesquite. Goes about 3 to 3.5 hrs for the full 7-bone roast. I pull it when the center hits 125 max, since it will rise some as you tent and rest for 30 min. You will have that full pink finish throughout.
Try this homemade horseradish sauce -- I gar-un-tee delight:
16 oz sour cream
Jar of Gold's prepared horseradish (drain)
2 T mayo
Small jar whole grain mustard
lemon zest and juice of half lemon
