I've had good luck with smoking a brisket, let it cool, then slice it cold. Put it in a pan with whatever juices or sauces you want and refrigerate it overnight, covered. To re-heat, I cover the pan in foil, sealed well and put in a 350 degree oven for whatever time it take to get hot.
